I’ve been curious to try an easy ANZAC slice recipe for a while. Last year I made some award-winning ANZAC biscuits, which went down an absolute treat in our family. For international readers, an ANZAC is a hard and crunchy biscuit made with rolled oats, golden syrup, coconut and brown sugar. They’re named after the ANZACs, the Australian and New Zealand Army Corps, our brave World War I national heroes.

This ANZAC slice recipe is so very easy and fast to prepare. You just melt some butter and golden syrup together, dissolve some bicarb soda in water, and mix the whole lot with flour, oats, brown sugar and desiccated coconut. Press firmly into a baking pan, bake, and you’re done in record time!

They’re terribly moreish, especially with a cup of coffee or tea. And they’d be a great small treat to add to a kid’s lunchbox. They’re also egg-free for those with egg allergies looking for a sweet snack when those sugar cravings hit. This slice recipe will last for at least 5 days in an airtight container (as if there’ll be any left after that amount of time!)

Ingredients
  • 125 g Unsalted Butter
  • 2 tablespoons Golden Syrup
  • 1/2 teaspoon Bicarbonate Soda
  • 2 tablespoons hot Water
  • 150 g Plain Flour
  • 120 g Rolled Oats
  • 150 g Brown Sugar
  • 90 g Desiccated Coconut plus extra for the topping

  • 125 g Unsalted Butter
  • 2 tablespoons Golden Syrup
  • 1/2 teaspoon Bicarbonate Soda
  • 2 tablespoons hot Water
  • 150 g Plain Flour
  • 120 g Rolled Oats
  • 150 g Brown Sugar
  • 90 g Desiccated Coconut plus extra for the topping

Instructions
  1. Preheat oven to 180 degrees Celsius (160 fan-forced; 350F). Line the base of a rectangular baking tin about 19 x 29 cm (7 x 11in) with baking paper. Leave the sides of the paper long so you can use them as handles to remove the slice.
  2. Add the butter and golden syrup to a small saucepan. Melt together over low heat. Set aside.
  3. In a small bowl, stir together the bicarbonate soda and hot water, then add it to the melted butter mixture.
  4. Add the flour, oats, sugar and coconut to a large mixing bowl. Pour the butter mixture in and stir together with a wooden spoon until evenly combined.
  5. Tip the dough into the prepared baking tin. Press the slice firmly into the tray. Sprinkle some extra coconut on top, then bake for 25 – 30 minutes. The slice is ready when the top and edges are golden brown.
  6. Remove from the oven and let the slice cool in the tin. Cut into 16 slices and serve.
Recipe Notes
  • Store at room temperature in an airtight container. Keeps for about 1 week.
