These Christmas Cherry Almond Cookies are so simple to bake, which is great for those of us rushing around in the festive season. These cookie balls are stuffed with almonds, coconut and cherries, and are finished with a cherry on top. Best of all, they can be mixed in just one bowl and bake in only 15 minutes.
I imagine these Almond Cherry Cookies would make beautiful gifts packaged with ribbon and adorned with bespoke gift tags.
Who doesn’t love crispy biscotti? I’ve flavoured these Christmas Biscotti with pistachios, cranberries, almonds and white chocolate. I love them sliced thick and toasted just so the edges are crispy, then dunked into a fresh cup of Italian coffee. They can be customised easily with your favourite dried fruit and nuts. Just keep the weight quantities the same.
I love these festive red, green and golden pinwheel cookies. The pattern comes from layering sheets of coloured dough on top of each other, rolling the dough up like a swiss roll, then cutting off cookie slices to bake. What’s Christmas without a Christmas Cake? This is a traditional Christmas cake recipe filled with fruit and soaked in brandy. Although ideally the cake is started weeks ahead to allow maximum brandy soakage, you could still start today and feed it brandy regularly for the next week.

This is the cake that got me to break my “no fruitcake” rule on the blog. Previously, I turned my nose up at every offer of fruitcake. Then, my Mum baked this Pumpkin Fruitcake using homegrown pumpkin. And boy did my opinion change. For once, I tasted a fruitcake that was actually moist and flavoursome. And look how naturally golden it is!
PANFORTE (SIENNA CAKE)
An alternative Christmas Cake is this traditional Italian Panforte recipe. It’s a chewy chocolate treat filled with dried fruit, toasted almonds and spices. Serve thin wedges of panforte with a cup of espresso, or wrap the whole cake in ribbon and package it up as a gift.

QUICK AND EASY CHOCOLATE FUDGE
In a Christmas pickle and need a fast and easy recipe? This Quick and Easy Chocolate Fudge has THREE ingredients and is mixed together so simply! You could customise the flavour for gifts by adding their favourite nuts, dried fruit or a few drops of flavoured essence. Even a little drop of liqueur would be perfect.
NO-BAKE RUM BALLS
