White Chocolate Macadamia Cookies with red and green M&Ms. These festive Christmas cookies are great for the Holiday season.
Christmas can be stressful, especially if you’ve volunteered to host! The last thing you want to do is spend more time in the kitchen than you need. That’s why I love these easy one-bowl white chocolate macadamia cookies. They’re as simple as beat, stir and bake!
For these Christmas Cookies I’ve chosen to flavour them with white chocolate and Australian Macadamia nuts. Macadamias are a soft, milky nut, and they’re easy to find here in Australia. But if you can’t find them near you, you could easily use Brazil nuts or even almonds.
These white chocolate macadamia cookies have an extra Christmassy touch by adding Red and Green M&Ms to the batter. I made these well before the Holiday season began, so I got my red and green candy by hand-sorting through a bag of M&Ms. You know how it goes: one for the cookies, one for me. One for the cookies, one for me….
Maybe they’ll have released their festive mix by now, which will save you time. Or just pretend that doesn’t exist and eat all the non-Christmas colours yourself.
If you like cookies with a crispy edge and slightly softer centre than these are perfect for you. You could always bake them a bit longer than recommended to make them even crisper. I found these cookies to be quite sweet, but delicious.
HOW TO MAKE WHITE CHOCOLATE AND MACADAMIA COOKIES

WHITE CHOCOLATE MACADAMIA COOKIES
Makes: about 24 cookies Difficulty: Easy
Large baking trays
Electric mixer/stand mixer
170g Unsalted Butter, softened to room temperature
150g Brown Sugar
100g Caster Sugar
1 Egg, lightly beaten
215g Plain Flour
1 pinch Salt
1 teaspoon Baking Powder
½ teaspoon Bicarbonate Soda
115g Unsalted Macadamia Nuts, roughly chopped
150g White Chocolate Bits
Red and Green M&Ms
Preheat oven to 180 degrees Celsius (160 fan-forced; 350F). Line large baking trays with baking paper.
In a large bowl beat together the butter, brown sugar and caster sugar until pale and creamy. Add the egg and whisk together until well combined.
Add the flour, salt, baking powder, bicarb soda, macadamias and white chocolate. Stir together until well combined.
Roll a heaped teaspoon of dough between your hands, then place on the prepared baking tray. Press 3 or 4 M&Ms on top. Leave at least 3cm between each roll of dough, as these cookies will flatten and spread as they bake.
Place on the middle rack of the oven and bake for 10-12 minutes. The cookies will turn golden brown underneath and on the edges. Remove from the oven and let the cookies cool for a few minutes on the tray before letting them cool completely on a wire rack.
- A longer baking time will give you crunchy cookies throughout. Shorter will give you crispy edges and a softer middle.
