Makes 16 squares
125g Unsalted Butter
2 tablespoons Golden Syrup
½ teaspoon Bicarbonate Soda
2 tablespoons Hot Water
150g Plain Flour
120g Rolled Oats
150g Brown Sugar
90g Desiccated Coconut
Preheat oven to 180 degrees Celsius (160 fan-forced; 350F). Line the base of a rectangular baking tin about 19 x 29 cm with baking paper. Leave the sides of the paper long so you can use them as handles to remove the slice.
Add the butter and golden syrup to a small saucepan. Melt together over low heat. Set aside.
In a small bowl, stir together the bicarbonate soda and hot water, then add it to the melted butter mixture.
Add the flour, oats, sugar and coconut to a large mixing bowl. Pour the butter mixture in and stir together with a wooden spoon until evenly combined.
Tip the dough into the prepared baking tin. Press the slice firmly into the tray. Sprinkle some extra coconut on top, then bake for 25 – 30 minutes. The slice is ready when the top and edges are golden brown.
Remove from the oven and let the slice cool in the tin. Cut into 16 slices and serve.
TIPS:Store at room temperature in an airtight container. Keeps for about 1 week.
