DESSERT BURRITO

Makes: around 4 burritos         Difficulty: Easy

EQUIPMENT:

Two Medium saucepans
Whisk

INGREDIENTS:

Crème Patissiere filling (vanilla custard)

500ml Full Cream Milk
2 teaspoons Vanilla Extract
2 large Egg Yolks
1 large whole Egg
125g Caster Sugar
40g Plain Flour

Extra

4 Soft tortilla shells
Dark chocolate dipping sauce
Icing sugar mixture, to dust
Chopped fruit filling of your choice (I used strawberry, banana and kiwifruit)

METHOD:

Make the crème patissiere filling

Add the milk and vanilla to a medium saucepan. Heat on low flame until the milk starts to boil. While the milk is heating get a medium bowl. Add in the egg yolks, whole egg and sugar. Whisk together until pale and thickened. Add the flour and whisk until all is combined

When the milk starts to boil remove the pan from the heat. Slowly pour the milk into the egg mixture while whisking continuously until all the ingredients are combined.

Immediately pour the mixture into a clean saucepan. Keep whisking together over medium heat until a thick custard forms. Remove from heat.

Pour the custard into a bowl. Cover the surface with clingwrap to prevent a crust forming on the custard. Place in the fridge to cool completely.

Assembly

Heat a tortilla in the microwave for 5 seconds. Spread a layer of chocolate sauce over the entire tortilla. Spoon a thick line of crème patissiere down the middle. Top the crème with chopped fresh fruit. Roll up the tortilla. Drizzle the top with more chocolate sauce and dust with icing sugar to finish.

BAKING TIPS:

  • Best eaten immediately while fresh

Instructions
