Easy Chocolate Baileys Ice cream
Most recipes call for an ice cream machine or hand churning the ice cream, but I found this totally genius Chocolate Baileys Ice Cream recipe by David Lebovitz. It involves no machine or hard labour. Just add the ingredients together, blend them, and freeze them.

Just add the ingredients together, blend them, and freeze them. This ice cream needs something added to minimise ice-crystals forming. And that special something happens to be Baileys Irish Cream liqueur and rum. With this naughty adult edge, there’s also a rich chocolate flavour thanks to the real melted chocolate inside and a creamy texture from whole ripe bananas. Definitely not an ice cream for the kids!
NO MACHINE CHOCOLATE BAILEYS ICE CREAM
Makes: enough to serve 2-3 people (4-6 scoops) Difficulty: Easy
EQUIPMENT:
Medium sized microwave safe bowl
Blender or food processor
Medium plastic or metal container with lid
INGREDIENTS:
55g Dark Chocolate, chopped (around 50% cocoa)
80ml Milk
80ml Baileys Irish Cream liqueur
1 large ripe Banana, peeled and cut into chunks
1 tablespoon (15ml) dark Rum
METHOD:
Place the chopped chocolate and milk in a medium bowl. Heat for 30 seconds then stir. Heat for another 30 seconds at a time until the chocolate has fully melted.
Pour the melted chocolate milk, Baileys, chopped banana and rum into a blender or food processor. Blend them together until the mixture is smooth.
Pour the mixture into a plastic or metal container, put on the lid, and place in the freezer for at least 4 hours to set.

Oooh, I’ve been making faux ice cream by blending frozen banana and cocoa powder (because I don’t have an icec ream machine), and didn’t know I could make something like this instead! Bring on the summer heat ;)

It’s pretty yummy indeed! The alcohol in the recipe helps keep the icecream texture smooth and ice-crystal free. It will still taste fine to swap the Baileys with milk, but it’s likely to be quite icey, almost granita-like when ready. Happy baking!
