These Friands with Strawberry Jam are easy to whip together for afternoon tea or a fancy high tea. These sweet and buttery cakes can be jazzed-up with a little fresh fruit such as sliced strawberries baked into their golden domes.

Friands or “financiers” are light spongy French teacakes made with almond meal, icing sugar, butter and egg whites. Traditionally they’re prepared in little loaf tins so they resemble little gold bars. This is an easy Friand with Strawberry Jam recipe to whip together for afternoon tea or a fancy high tea. These sweet and buttery cakes can be jazzed-up with a little fresh fruit such as sliced strawberries baked into their golden domes. A side of whipped cream or vanilla ice cream is a refreshing antidote to their sweetness, but if you have a sweet tooth a dusting of icing mixture and a dollop of jam is pretty great too.

FRIANDS WITH STRAWBERRY JAM

Makes: 12 friands       Difficulty: Easy

EQUIPMENT:

12-hole friand tray, or muffin tray

INGREDIENTS:

150g Almond meal
90g Plain Flour
240g Icing Sugar, sifted
1 teaspoon Baking Powder
8 Egg Whites
250g Unsalted Butter, melted
Icing Sugar, to dust
Jam flavour of your choice to serve on top

METHOD:

Preheat the oven to 190 degrees Celsius (170 fan-forced; 375F). Spray the insides of a 12-hole friend or muffin tray. Set your kitchen timer for 25 minutes.

Add almond meal, icing sugar, flour and baking powder to a large bowl. Stir the dry ingredients together until well combined. Slowly add in the egg whites while hand whisking the mixture. Continue whisking as you add the melted butter until the mixture is just combined.

Fill each friand or muffin hole with the batter until it’s ¾ full.

Check the oven has reached the right temperature. Place the tray in the middle of the oven. The friands are done when the tops are golden brown and a skewer inserted into the middle comes out clean. If not, add another 5 minutes to the timer then check again for doneness.

Remove from the oven. Let them cool for 10 minutes in the pan before removing them to a wire rack to cool completely.

Just before serving dust each friand with a little icing sugar and spoon some jam on top.

BAKING TIPS:

  • Will store at room temperature in an airtight container for up to three days without the jam added.

You will need: a 12-hole Friand tin, otherwise a 12-hole muffin tray is fine too.
