Saw you mention chocolate cola cake – look up james martins version on good food it is the most delicious chocolate cake and i use it for cupcakes too

Your carrot cake recipe is NOT a cake or cupcake recipe. It is a recipe for muffins. And by mislabeling it as such, you have single-handedly ruined by weekend. I was tasked with bringing DESSERT (not muffins) – as in SWEET cake or cupakes – to my husband’s family’s Easter dinner. I made these, and they’re so unacceptably NOT dessert – nor do they resemble anything like carrot cake as it is UNIVERSALLY and traditionally known (SWEET!) that I cannot bring them. I have no dessert to bring now, and I am simply praying there is a bakery open tomorrow morning. Based on this one recipe alone, I would never trust you or another recipe on your site. I have only myself to blame for trusting some online wannabee baking expert. But you certainly sell yourself and your recipes as excellent. That is misleading.

Hello! Thanks for your kind words. I suppose you could use a blender in small batches depending on power. Before I went higher-tech, I would crush the biscuits by hand with a rolling pin. A little messier, but great stress relief!
